I used to bake the most disappointing muffins in the world. They would come out of the oven all tiny and flat. And I would pass by a bakery at the grocery store and wonder with envy why can't my muffins look like that??
Muffin fails. So many muffin fails...
I'll never forget that time I dreamt up this beautiful and to-die-for muffin adorned with strawberries and dark chocolate chunks. I was salivating about my genius muffin masterpiece! But instead I got another muffin fail. It looked nice on the outside but on the inside there was a raw and soggy batter. So disappointing. I even used up my precious Lindt 85% dark chocolate.
But after much trial and error I've been informed with plenty of muffin-baking knowledge. And I'm sharing my advice with you. Because you deserve it!
Muffin Baking Tip #1 Always preheat your oven to a higher than normal setting. Then lower to the usual temperature once the muffins are inside.
This helps to achieve that glorious round and tall muffin top. Like the ones in the bakeries! So, usually that high setting would be 425F. I crank it up a little higher, 450F. And then once your muffins are placed inside you could lower it to the normal temperature. In this recipe the oven is preheated to 425F and it remains there so I just preheated my oven to 450F and lowered it to 425F once the muffins were placed inside.
Muffin Baking Tip #2 Toss the berries with flour.
Tossing the berries with flour will prevent you from getting the soggy batter inside the muffins. Usually a tablespoon of flour is enough to toss the berries with before you stir them into the muffin batter. Or you could just take some of the measured flour that you have already scooped out for your recipe.
Muffin Baking Tip #3 Fill the muffins tins to the top.
Don't be afraid to fill the muffin tins all the way to the top. I mean, if you want huge muffins. Who wants small scanty muffins, right?
Muffin Baking Tip #4 Cover entirely with crumb/topping mixture.
Don't just lightly sprinkle it on and leave bare spots. Don't be stingy. Cover entirely with crumb/streusel mixture. The more the crumbs the more the merrier... muffin.
Now that I have shared my muffin advice. I hope you bake the best muffins ever!
