Glazed Chocolate Cake

The first recipe I had to try from the Everyday Food cookbook was this chocolate cake. Obviously, because I'm a chocoholic.  Also, obvious, I don't care that it's a new year.  Where are my resolutions?!   I think EAT MORE CAKE is my resolution...

Actually, no, I am currently working on cutting back on sweets and sugar. Just because I like to challenge myself  every now and then.  And we'll, MAYBE I was eating too many sweets over the holidays.  But I can't completely rid my life of sugar so I'm allowing myself something sweet once a day but only in the morning with my cup of coffee. I'm going to continue this for two weeks. On the third week I will only allow myself a sweet treat on the weekend. That means Saturday and Sunday, not just one day! I think this will make the anticipation for weekends even more exciting. Don't you?

Okay! Enough about my sugar addiction.

Let's talk about to cake! 




It was super decadent and intensely rich.  However, I found it to be too dense and dry.  Maybe I overbaked it... my oven can be a little wonky.  Or maybe it was because I didn't beat the eggs in ONE AT A TIME. I accidentally tossed them in all at once.  I read that part of the instructions a little too late before I realized my mistake. I seriously need to learn to read recipe instructions over and over again. And over and over again. Until it's ingrained in my brain!

But!

The cake was still edible. I found a little trick that worked out well for me. When you cut your slice warm it in the microwave for just 10 seconds. It softened perfectly along with the ganache. Then you top it with whipped cream and voila! A slice of chocolate decadence. Yum!

Another thing I have to add. This cake is not too sweet.  The richness of the chocolate makes it almost bittersweet. So, I'd say it's even a perfect way to cut back on sugar! Or maybe I'm just kidding.
